Delectable Chicken Recipe that Begs to Be Shared!

Yesterday Chris made a delicious dinner, I immediately knew I had to share it! However, I was stuffed... so I haven't gotten around to posting it until today! Luckily I did remember to take a picture.

Whole Chicken Crock Pot Recipe

Tender, fall-off-the-bone chicken! Skip the overnight refrigeration if you are in a hurry. For variety, eliminate the onion and substitute a quartered lemon or two, stuffed into the chicken cavity.


SERVES 4

  • 4 teaspoons salt
  • 2 teaspoons paprika
  • 1 teaspoon cayenne pepper
  • 1 teaspoon onion powder
  • 1 teaspoon thyme
  • 1 teaspoon white pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1 large roasting chicken (with pop-up timer if possible)
  • 1 cup onion, chopped (optional)
  1. In a small bowl, combine the spices.
  2. Remove any giblets from chicken and clean chicken.
  3. Rub spice mixture onto the chicken.
  4. Place in resealable plastic bag and refrigerate overnight. (I usually skip this step because I'm always in a hurry).
  5. When ready to cook, put chopped onion in bottom of crock pot.
  6. Add chicken. No liquid is needed, the chicken will make it's own juices.
  7. Cook on low 4-8 hours.
  8. Note: I highly recommend a pop-up timer in the chicken because some crock pots cook faster/slower than others (my crock pot cooks this recipe in 4-5 hours).
Chris really wanted to add some liquid, because he was convinced the onions would burn, but I convinced him to try the recipe as is, and it was perfect! Instead of chopped onions, he used whole pearl onions, carrots, and chopped celery. He made a box of Chicken Flavored Stove Top to go with it, and it was definitely one of the best meals I've had in a LOOOONG time! I highly suggest you try it!

I've Reached 100 Followers!!!!

I'm so excited! I've reached 100 followers! In one of my last couple posts, I hinted that I might do a giveaway when I reached 100. Then I sat at 99 for a while.... But today! Woohoo! And I think I will do a giveaway. In fact... I have something very special planned. I will be revealing the details of the giveaway and how to enter in the next couple days. I just wanted to take the time to thank everyone who comes and reads these utterly ridiculous ramblings, silly stories from life, and all the things I have put out there into the Universe. The Innocent Joys of Youth

I realized today how far away from my youth I have gotten. I saw my son doing something I haven't done in years. Something I have always loved. It made me realize just how much I am missing by letting my life become so complicated that I don't remember to enjoy the little things! Can you see it? His little sweet hand out the window enjoying the wind?
I was driving along in my usual driving stupor, quite possibly singing loudly to the radio, and I happened to look in my mirror. When I saw how he was enjoying the wind in his fingers, it really brought me back to how I used to love to do that. I've always felt a special connection with the element of Air, but I haven't been feeling that connection lately. I now know one small way to bring it back! So if you happen to be driving around in my area and see a grown woman singing loudly to the radio, with her arm out the window waving in the wind.... Smile... it's probably me!
